Professional Cookery SVQ3

What is special about this course?

This one-year programme is for those who wish to train and practice developing kitchen skills within the college’s Training Restaurant at the new campus. You will gain practical hands-on learning experience on how to plan, cook and present various styles of menus and develop your initiative and coaching and leadership skills to be ‘industry-ready’ on successful completion of your course. The content covers a wide range of competency based practical units with embedded underpinning knowledge. You will also enjoy working in partnership with local suppliers and in-house staff.  Completion of this course will lead you to HNC in Hospitality.

Entry requirements

Applicants should have SVQ Level 2 in Professional Cookery or equivalent. You could also be invited to attend an interview and practical skills test.

This course includes:

  • Production cookery like complex meat, poultry, fish, sauces and dressings, vegetables, bakery and pastry dishes; food hygiene; health and safety;
  • Core skills: numeracy; information technology; communications;
  • REHIS Customised Intermediate Food Hygiene
